Bach Goldberg variations.
I can get through the notes for most variations but am a long way from playing at speed and with proper voicing. Some of the "2 manual" variations present the most challenge.

Chopin Ballade 4, but could be difficult for the general audiance to enjoy.

I have many on my dream list...
Chopin: Ballade #4
Schubert: Wanderer Fantasy
Liszt: Mephisto Waltz
Brahms: Handel Variations
Rach: Concerto #2
Liebermann: Gargoyles

Stravinsky’s Three Movements from Petrouchka. Absolutely a dream!

For my case, Mendelssohn's piano concerto no 1 in G minor. 😄

Chopin piano concerto no.1 in E minor

Many, but for the sake of answering this question: the first movement of Schubert's Sonata in G Major, D. 894. I'd like to play the first movement in 24-27 minutes (a la Richter or Afanassiev), but with such a sense of pulse and ravishing tone that the listener is riveted to the very end.

Chopin's Revolutionary Etude (Op 10, No 12)...and so many others
