Replicating a concert pianist's practice routine for average Joe

I have played piano since 8 years old with a 5 year hiatus during my later tertiary education and first job (currently 33 years old). I still have ambition to be able to play demanding pieces (Chopin's Ballades, Liszt Dante sonata, Rachmaninoff etudes etc.) but I'm struggling to find answers on how to create an environment/ regiment that is required to get to the upper-echelons of the piano world. Tips like technique exercises, practice routines, mental state etc. will be appreciated from pianists with valid experience.

    As a reference - I have memorized and can play the Ballade no.1 with few mistakes but lacking fluency.
